For the final night of the year, Babacool transforms into an exclusive pop-up gastronomic destination, with your feet in the sand and the Caribbean Sea as your backdrop.

Delicately prepared smoked salmon, citrus-infused avocado, fresh citrus and fine herbs.

Foie gras, mango confit with aged rum & Jérôme Ferrer’s celebrated Lobster Cappuccino with truffle

Foie gras delicately paired with mango lightly confited in aged rum and golden brioche, served alongside the Chef’s signature lobster cappuccino delicately perfumed with truffle.

THE SEA IN ALL ITS SPLENDOR

Roasted jumbo scallop, silky coconut, lime & sturgeon caviar pearls

Jumbo scallop seared to order, light coconut emulsion, fresh lime, fine herbs and precious pearls of sturgeon caviar.

Roasted and caramelized half lobster tail, silky potato mousseline with smoked-garlic butter, preserved-lemon cream and rich reduced jus.

Angus beef tenderloin, rich jus, grilled vegetables & island chimichurri

Grilled heart of Angus beef tenderloin, deeply reduced meat jus, grilled vegetables and a vibrant Caribbean-inspired chimichurri.

Very limited seating

To preserve the quality of service and the exclusive nature of this exceptional evening, only a limited number of guests will be accommodated.

A $50 deposit per person will be required at the time of booking to secure your table.

Due to the limited number of tables available for this unique celebration, we strongly recommend booking as early as possible.

Our younger guests

Because New Year’s Eve is also a celebration to be shared as a family, the Chef will offer children aged 10 and under the same gastronomic menu, specially adapted into half portions.

Children’s Menu — $85 per child

To ensure the quality and smooth organization of the evening, the number of children choosing this menu may not exceed the number of adults seated at the same table.

Allergies & dietary restrictions

To allow our culinary team to prepare your experience under the best possible conditions, all food allergies or dietary restrictions must be communicated to us at least 48 hours prior to your reservation.

Our team will make every reasonable effort to adapt certain courses whenever this can be done safely and appropriately.

In the case of a severe or potentially life-threatening allergy, if our culinary team cannot confidently provide a suitable alternative under sufficiently safe conditions, Babacool reserves the right not to accept the reservation concerned.

The safety of our guests remains our priority at all times.
